Tuyết Shan Tea This tea is from the Mountainous (Shan) Northern regions of Vietnam which are home to ancient wild tea trees, most being over 300 years old. The distinctive silver hairs, reminiscent of snow (tuyết), that cover the dried leaves give rise to their naming convention.
Origin: Hoàng Su Phì
Tasting Notes: A one bud and one leaf Green Tuyết Shan tea. After a short wither process, the leaves are roasted, rolled and slowly dried. Yields a bold golden coloured liquor with soft floral and grassy notes. A hint of bitterness serves to accentuate the lingering sweet aftertaste.
Preparation: Place 4grams of tea into tea vessel. Gently pour 50ml of 75° water and quickly pour away. This first rinse is an optional step which washes away any particulates that remain on the leaves. Gently pour 250ml of water into your tea vessel and rest for 4 minutes. Repeat for up to 4 infusions with longer infusions for each successive brew. Higher temperatures will yield a stronger more bitter tea.
