Tuyết Shan Tea This tea is from the Mountainous (Shan) Northern regions of Vietnam which are home to ancient wild tea trees, most being over 300 years old. The distinctive silver hairs, reminiscent of snow (tuyết), that cover the dried leaves give rise to their naming convention.

Tasting Notes: A single leaf White Tuyết Shan tea. The natural shape and colour of the leaves are preserved by low intervention and low oxidisation. Yields a pale straw coloured liquor, sweet with a mellow rounded mouth feel and malty scent.
Preparation: Pour 50ml of 80° water into tea vessel, place 4grams of tea on top and top up with water until leaves are submerged, then quickly pour away. This first rinse is an optional step which washes away any particulates that remain on the leaves. Gently pour 250ml of water and rest for 5 minutes. Repeat for up to 4 infusions with longer brews for each successive infusion.
